Thank you for all your suggestions.
A few suggested using Google Slides and one person (thanks again to Kathleen Currie Smith at Ledyard H.S.) shared a template with me.
It looks like the Google Slides is the easiest option which I'm going to go with at this point considering the teacher(s) are coming in Monday and will be starting their research right away.
I'd rather not have to take the time to go through how to create a bruchure in Docs if I don't have to as I'm sure you can understand yourselves.

I'm not aware of a template in there that would let you create a brochure such as with MS Publisher.
I took a quick look in Google Docs, but didn't see that sort of template. 
They could do something with creating tables in a Google Doc, but I was wondering if there were another easier way to do this.
