I'm a huge Sy Montgomery fan. Look into the Scientists in the Field series, which look like picture books (PHOTOGRAPHS!!!!!!!!!!!!) but pack scientific PUNCH. There are books about octopus, tapirs, snakes, tarantulas, kakapo parrots--not just the animal, but the efforts of the scientists who are looking out for them. Ms. Montgomery often writes about the same creature on several reading levels in separate books, so there might even be something for strong readers AND struggling readers in the same class. She also has a phenomenal biography of Temple Grandin.
