Maybe meet the kids where they are and use a book set in China, or about Chinese Americans.  Cynthia Leitich Smith has a good list--many are picture books, but I sometimes use picture books with high school kids, so...

My own suggestions would include "Lon Po Po," which opens up a whole discussion about common threads in folk tales across cultures, and selections from Paul Yee's short story collection "Tales from Gold Mountain."

 An English teacher at our school is looking for some good
 books to do in literature circles with a class of students
 from China.  However, the students are all at different
 levels with English reading/comprehension.  So, she is
 looking for books with similar

 Grades 2-3

 Also, because they are from China, they also struggle
 with some cultural issues.  We discussed doing
 historical fiction (Attack of the Turtle, My Brother Sam is
 Dead, etc.) but the kids have no exposure to American
 history.  
 
 
 
 
 
 Perhaps adventure/survival books (i.e. Gary Paulsen)
 
 
 
 
 
 If anyone has any suggestions, I would love to hear
